Chef Shuai Wang was the runner-up on the 22nd season of Bravo’s Top Chef and is the force behind two standout restaurants in Charleston, South Carolina—Jackrabbit Filly and King BBQ—where he brings together the flavors of his childhood in Beijing and the spirit of the South in some pretty unforgettable ways. He grew up just a short walk from Tiananmen Square, in a tiny home with no electricity or running water, where his grandmother often cooked over charcoal. Later, in Queens, New York, his mom taught herself to cook—her first dishes were a little salty, but they were always made with love. And somewhere along the way, Shuai learned that cooking wasn’t just about food—it was about taking care of people. After years working in New York kitchens, he made his way to Charleston and started building something that feels entirely his own. Michael is also the consulting Chef at The Green Turtle Club in Abaco, Bahamas and for more than 25 years, he has been a leading chef across the United States, Canada, and The Bahamas. Michael owned and operated Tempest, an award-winning restaurant in Wolfville, NS. Michael has twice cooked at New York’s prestigious James Beard House. His cookbook, Atlantic Seafood, was runner-up at the 2010 Taste Canada awards that was recently re-released in an updated second edition. Michael is the former Co-Chair of Slow Food Canada and was honoured with the Queen Elizabeth II Diamond Jubilee Medal in 2011 for his contributions to improving the food system for all. He was Nova Scotia Local Food Hero in 2010 and named Taste of Nova Scotia’s Culinary Ambassador in 2015. The Nutrition Labeling and Education Act in the U.S. and other similar laws in other countries was designed to help consumers make more informed choices about what they eat. Through the use of nutrition information on food packages along with other important information such as ingredients, nutrition facts, and nutrition data, consumers can get more information on the food they are eating and how healthy it is. Nutrition labelling errors happen all too often in manufacturing facilities around the world. These mistakes lead to financial loss for manufacturers due to recalled products and legal issues such as lawsuits from consumer groups or individuals who were affected by nutrition label inaccuracies. In July 2016, a fifteen-year-old girl named Natasha Ednan-Laperouse suffered a fatal allergic reaction after eating an olive, artichoke, and tapenade baguette. The product contained sesame seeds, which Natasha was allergic to, and following the consumption of the food product, Natasha, unfortunately, passed away from anaphylaxis. This all ensued due to the food product not containing the appropriate allergen information, ultimately causing her death. The incident prompted Natasha’s family to campaign for increased legislation around appropriately labelling food products to include all ingredients and potential allergens. This resulted in the introduction and implementation of Natasha’s Law. In this episode of the Healthy Menu Podcast, we’ll be discussing creating a CFIA compliant nutrition fact label featuring Christine Billinger, Design & Marketing Manager. Christine will talk about nutrition fact label exemptions, rules to remember when displaying labels, changes, and more. A nutrition fact label is designed to reflect the most up-to-date recommendations from each country’s respective governing body regarding the nutrition facts of certain foods. The mandated contents of a label are routinely updated and make it easier and more accessible for consumers to understand the nutritional value of the food they are buying and make healthier and more informed choices about their diets. It can be challenging to ensure that you as a food and beverage manufacturer are remaining compliant and keeping up with the latest guidelines.
