First, we remove the head of the prawn, cut it from the back, remove the shrimp vein and shell, then add salt and lemon juice, and marinate the shrimp for ten minutes. In the next step, we prepare the white steamed buns -- cut the steamed buns into evenly-sized small pieces to be used later, then cover the marinated prawns with starch, then brush with egg wash, and finally coat the steamed buns evenly, pressing gently with your hand. When the oil in the pan is heated to 60% hot, add the steamed prawns and fry for five minutes on medium-low heat. When the prawns are fried until golden and crispy, pour out and set aside. 吃一堑长一智 (chī yī qiàn zhǎng yī zhì) - "A fall into a pit, a gain in your wit," meaning that one learns and becomes wiser after experiencing a setback or making a mistake. A: 你上次被骗的事还记得吗？ Nǐ shàng cì bèi piàn de shì hái jì de ma? Do you remember the time you got scammed? B: 当然记得！吃一堑长一智嘛。那次之后，我可长记性了。 Dāng rán jì de! Chī yī qiàn zhǎng yī zhì ma.
